The most common poultry to grill is chicken, its meat is abundant, and tender and has a light taste. In this technique that we will be presenting the chicken loses its usual shape and takes on the shape of a frog. Grilling the chicken in this manner is excellent because it permits even cooking of the breasts that are exposed equally by the heat of the coals as well as the remaining parts.
Frogged Chicken Recipe
A tasty citrus flavored grilled whole chicken. Cut in an innovative frog style for another way to present this commonly grilled poultry.
Ingredients
- 7 pound Chicken whole
Ingredients for a chicken marinade
- 2 clove garlic chopped
- 1 tbsp olive oil
- 2 tbsp paprika
- 1 tsp black pepper grounded
- 1 tsp red pepper flakes
- 2 whole lemons squeezed
- 1 tbsp Salt kosher
Instructions
- mix all the marinade ingredients together in a bowl
- Place the chicken on its backside on the board or table. Cut with a knife or scissors laterally from abdomen to thorax, cutting through the ribs and leaving the breasts free attached to the body only by its shoulder bones. Turn the chicken over and with one hand press down to flatten into a frog position.
- Remove all the excess fat by the chicken tail, without leaving any meat exposed (do not remove the skin).
- Marinate the chicken for 1 hour minimum
- Place the chicken on the grill, skin side down at a moderate (medium low) temperature. Watch not to burn the skin. If you place your hand 2 inches above the grill and can hold it for 8-10 seconds, you have the right temperature.
- Once the skin has browned and crisped, turn the chicken over, exposing the interior to the coals and continue to grill until cooked, 165° F internal temperature
- To serve, let the chicken rest, put the cooked chicken on a board and cut it in half lengthwise and then across,separating the breasts and the wings from the bottom quarters.
