Grilled Argentinian Sausages with Green Peas and Sauerkraut

The main actor of this dish is the Argentinian chorizo, grilled but it can also be baked. The ground meat is generally 100% pork.  But let me tell you that I had the opportunity to try different combinations, anything from 100% beef to 80% pork and 20%  beef  and vice versa. All delicious, but still my preference is 100% pork, casing it in the fine intestine of the pork.

Grilled Argentinian Sausages with Green Peas and Sauerkraut

Simple, fast, economical, and tasty, the important thing about this dish is that it is made with Argentinian sausages. You can use Italian sausages with no fennel seeds, and you will have a very similar flavor profile and you can choose the sausages to be spicy or not, depending on your preference.

Ingredients
  

  • 1 pound Argentinian chorizos or Italian sausages 100% natural or organic.
  • 3 cups green peas fresh or frozen
  • 2 medium carrots Cut it into small cubes.
  • 12 cherry tomatoes Cut it in half.
  • 8 ounces sauerkraut drained
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions
 

  • In a medium saucepan bring water to boil.
  • Cut carrots into small cubes.
  • Cut the tomatoes in half.
  • Cook the sausages on the grill over medium hot embers until they reach an internal temperature of 155°F.
  • When the sausages have reached the internal temperature of 135 ° F, put the carrots in the boiling water first for 3 min.
  • Then add the peas for an additional 2 min. If the peas are frozen, add 1 more min. to boiling time.
  • Drain the vegetables and add the olive oil, salt and pepper on them.
  • Check that the sausages have reached an internal temperature 155 ° F. Remove from the grill.
  • How to the plate: Place a cup of vegetables on the plate. Cut a sausage in half at a 45-degree angle and place on top of the vegetables.
  • Add the sauerkraut and tomatoes to finish plating and Enjoy!
