The T-bone steak is a cut from the short loin of the cow and includes the T-shaped lumbar vertebrae, which includes the larger strip steak from one side and the smaller portion of the tenderloin on the other side of the bone. This cut is best cooked on the grill with direct medium heat, no flames (except for those that appear when the fat from the steak melts and meets the embers).
T-Bone steak al Limon Recipe
Pushing the flavor sensation, this grilled beef steak over charcoal embers, marinated with lemon and red pepper flakes, finished with a touch of dry sherry, will have you wanting more.
Ingredients
- 4 8oz T-bone Steak
- 2 each Garlic clove finely chopped
- 1 tsp Red pepper flakes
- 2 tsp Kosher salt
- 2 tsp pepper
- 3 whole Lemon zested then juiced
- ⅛ cup Dry sherry
Instructions
- Peel and finely chop garlic
- Zest the lemons and juice them. Then mix with garlic, red pepper flakes, salt, pepper and oil.
- Brush the steak with the lemon marinade and refrigerate covered in the refrigerator for 3 hours.
- Prepare the grill with charcoal embers. No flames. Reach a temperature of medium high. (if you put your hand 6 inches from the grill, if you can hold for 10 seconds, you have reached the correct temperature).
- Cook the steak 4-6 minutes per side, depending on how you like your doneness. If you use a thermometer 130 degrees would be medium rare.
- Remove from grill and let the steak rest for a few minutes. Add a touch of dry sherry liquor over the steaks before serving.
